Hushpuppies

Hushpuppies are fried, round, pieces of cornbread, typically served along side fried catfish, but are great with many other Southern dishes.

Rumor has it, the name 'huspuppies', came about, when hunters were sitting around a camp fire one night, tossing pieces of cornbread, to their hounds, to keep them from barking.

Whether there is any truth in the story, or not, the name 'hushpuppies' is here to stay!

Shrimp Creole

Shrimp Creole is an infamous New Orleans dish, typically served on Fridays.

The base is made from a light brown roux and tomatoes, cooked with the 'Holy Trinity' (green peppers, onions, and celery), as well as the 'Pope' (garlic).

Fish stock is added, along with shrimp, and then simmered for flavors to meld.

Shrimp Creole is served over a bed of white rice.

Peach Cobbler

I get asked quite often, 'what is a cobbler', so I figure, I'll give ya' a little information on that.

A cobbler is fruit dessert, that is baked in the oven, with the fruit, and juice from the fruit, butter, flour, and organic sugar.  The sugar, along with the fruit juice, bubbles away in the oven, creating a 'cobbled', dessert, that is absolutely delicious, especially when topped with vanilla ice cream.
