While I stand behind all of the Louisiana Fish Fry Products offerings, because I know they are all quality products, I would like to share with you, some of my own, personal favorites.  Recommendations from the Mississippi Queen........

 One of my favorite Louisiana Fish Fry Products, offerings, is the Cajun Gumbo Mix.  If you have ever made gumbo, yourself, then you know, gumbo can easily be a 'two day' affair, by the time you do all of the prep work, chopping your Holy Trinity, chicken, sausage, or cleaning seafood.  This mix won't eliminate the prep work, but it will definitely shorten the cooking process, down to around 30 minutes time, with a 'just add water', top quality, mix. 
 
What this Cajun Gumbo Mix, from Louisiana Fish Fry Products, does, is takes away making the roux, and the stock, and that part alone, can take hours!  The fact they sell this gumbo mix in commercial sized bags, tells you that many restaurants, and especially those in the New Orleans area, use this mix as the base for their gumbo, and rumor has it, many of those restaurants, are on the 'Best Places to Eat in New Orleans' list!
My personal favorite of the Louisiana Fish Fry Products fish fry mixes, is the New Orleans Style Fish Fry with Lemon.  I realize it is very 'un-Mississippi like' for me to admit my favorite fish fry mix is actually a 'flour based' one, rather than the traditional cornmeal ones, used throughout Mississippi, but, this is, in fact, my personal favorite.  It has a nice, mild Creole seasoning, and you can taste the real lemon. 
 
If you have ever sampled my fried catfish, then you have tried this fish fry mix, because it is the only one I use!
 
The Louisiana Fish Fry Products Remoulade Dressing is a staple in my diet.  Traditionally, served as a side dipping sauce, in New Orleans, on side of boiled shrimp, in a cocktail glass, but it is also used as a key ingredient, in many Creole recipes. 
 
I LOVE this dressing, and I use it often, in my coleslaw dressing recipe; as a dipping sauce for fried catfish and seafood; and as a marinade for sauteeing or grilling chicken.  I usually tell people, 'I love this so much, I can drink it by the glass'!
The Louisiana Fish Fry Products Cobbler Mix, is a great little mix, to have on standby, for those times you want a quick dessert, or you need to use up some fruit, which may be getting close to the end of its 'shelf life'.  It's quick and easy to use, and taste fantastic!  This is an ideal product to use with apples, peaches, blueberries, and blackberries.

Did you know, these interesting facts about Mississippi..........

 

-Mississippi began commercial production of Farm Raised Catfish in 1965 & had lead the industry ever since. Belzoni, Mississippi, is called the Catfish Capital of the World.

 
-Did you know that Barq’s Root Beer was first bottled in Biloxi, Mississippi?  Root beer was invented in Biloxi in 1898 by Edward Adolf Barq, Sr.
 
-Natchez was settled by the French in 1716 and is the oldest permanent settlement on the Mississippi River. Natchez once had 500 millionaires, more than any other city except New York City.
 
-The Natchez Trace Parkway, named an All American Road by the federal government, extends from Natchez to just south of Nashville, Tennessee. The Trace began as an Indian trail more than 8,000 years ago.

Cooking with the Mississippi Queen
 
I thought I would include this in my newsletter, as a bit of a 'fact finding' mission, to see if any of you might be interested.  I have been asked, a number of times, if I would ever consider teaching cooking classes, or offering cooking demos, and I am, now, taking a serious look, into this, and quite possibly, launching them, this coming fall.
 
I am working on another project, as of now, and will not have the time, to devote to the research, and development of this project, until this summer.  However, I thought I would put it out there, welcoming any feedback, and suggestions, which you might have, should any of you be interested.  This way, when I do begin my work on this project,
I can take all of this, into consideration.

Happy Mardi Gras Season!  Yes, it is that time of year again, when many of you, anxiously await, the arrival of my infamous, authentic, Mardi Gras King Cake, from Mississippi Queen Foods.  The Mardi Gras King Cakes are officially rollin' out the door. 
  
This year, as promised, I have extended my offerings of the King Cakes, beyond the Greater Toronto Area, and I am now shipping them, across Canada.  Thank you, everyone, for your patience, with me, as I have grown to meet this demand. 
 
For those of you, who may not be familiar with my King Cakes, I do make my cakes in the traditional, New Orleans style, which is a braided, Danish cinnamon coffee cake, finished with a fondant icing and decorated with festive Mardi Gras purple (justice), green (faith), and gold (power) sugars.  Each of my authentic, Mardi Gras King Cakes, includes a plastic baby cooked inside; gold foil covered cake board; 2” decorative crown; doubloons; and windowed cake box.  $45.00 for each Mardi Gras King Cake.  Pick up is available, and delivery/shipping is extra.

The Mississippi Queen is Taking a 'Buying Trip' Down South!

Each year, for U.S. Thanksgiving, I travel down to Mississippi to spend some time with my family, and friends, for the holidays, but also to do a 'buying trip' of goodies, which I bring back for everyone. 

I hit the road tomorrow morning, and I expect to be back in Toronto around December 3rd.  If you have any special requests, or want to ensure I am replenishing your favorite products, please be sure to contact me.  I will check email regularly. 

 

Be sure to check my Facebook page, for Mississippi Queen Foods, which is where I will upload pictures and information about any new products, I purchase along my travels.
