Heah, I know what ya' Folks are thinkin'...or, at least ya'
Folks who are still readin' this!  It ain't even the end of
November, and I'm sendin' out a 'Happy Holidays'
newsletter....I know....WAY too early for that, right?  
Well, Imma be real honest, and tell ya' that Imma right
there with ya'!
 
I ain't no different then ya'll on this one.  I usually work
fairly
late on Christmas Eve, taking care of orders, with my own Christmas
tree usually in a 'half way up / half way down' sort of state, all
throughout the month of December.  I've had that shocking moment,
in the midst of filling orders, when I realized if I did not drop what I
was doing, at that moment, and run to Toys R Us, Santa would not
be 'visting' my daughter, and I, would not be receiving my 'Mom of the Year'
Award, at all.  I have even opened my own fridge on Christmas Day, to
find I forgot to defrost my own turkey!  
 
Nope, I ain't makin' this stuff up.  So, let's not all be confused, thinkin'
Imma super organized woman, here, in Mississippi Queen Foods Land,
when it comes to the holidays.  I'm not.  I will admit, I am in denial, as well.  
 
Maybe it's because I've been receivin' so many holiday promotions,
in my email, I started feelin' a bit guilty, and a bit like a slacker,
because I had not sent out any myself.  So, get ready, ya'll, here it
comes.....it's my best pitch at promotin' and sellin' ya' somethin' because
it's Happy Holidays Time!........

I'll let ya' in on a lil secret, and tell ya' what a few of my clients do,
for their holiday gifting....they actually send a lil note to me, of all
the folks, on their list, asking me to make some Pecan Pralines 
for a few of them, and boxes of Red Velvet Cupcakes for some of the
others, Southern Pecan Pies go to this one, and that one....a few even
get Southern Groceries all packaged together for someone real
good on their list....and I have all my holiday ribbons and decorations,
so I can make all this stuff look extra purty for 'em.

I show up at their place, or they pick it all up from
me, and then they just go 'round and drop it all off....or,

All I know is they ain't all stressed out, when I get there....
maybe I mighta been a lil stressed out on the other side,
but we ain't gonna talk 'bout that....
maybe they kinda smart.....just sayin'.....
 
Ok, Folks, that's the end of my holiday promotin',
but ya' know Imma be back, again, talkin' 'bout this,
once time starts runnin' out, and I know ya'll be all
stressed out, in need of some desparate gift suggestions.

announce, Mississippi Queen Foods has formed a partnership,
 
What you can expect to see, as we work together, promoting
the Great State of Mississippi, is a greater 'Mississippi presence'
at many of the upcoming festivals and events, especially the
blues events, for the 2013 season.  This will also mean,

food, at my booth, more often next year, because there

 Creole Crab Cakes with Remoulade Sauce
 
 Creole Crab Cakes are a Southern favorite, and a nice
addition to your meal, as an appetizer, or even as an entree. 
 
Crab Cakes are made by combining lump crab meat,
mayonnaise, egg, bread crumbs, and any combination of
Cajun/Creole seasonings, to suit your taste.  Once they are
formed, into oval patties, they can then be pan fried, in butter,
or deep fried to golden brown.  Best served with a side of Creole Remoulade dipping sauce. 
 
      
           
 
  
 
                      
 
Stuart's Cajun Dill Pickles
 
Stuart's Cajun Dill Pickles are a lil something I
picked up, while Down South, on my last buying
trip.  However, I bring them back, in a very limited
quantity. 
 
These pickles are spicy, and homemade, by a Cajun,
who lives along the Mississippi Gulf Coast.  They
are highly recommended, as a good edition to a
Bloody Mary. 
 
I will be upfront, and say, they are definitely not
cheap, but the price per bottle, reflects the prem-
ium quality of the product, and of course, the fact,
you will not find these anywhere else in Canada!

 Fall is upon us, and Thanksgiving is right around the corner.  Don't forget to order your 'Slap Ya' Mamma Two Times' Good, Southern Pecan Pies, for your celebration.  These pies are made with lots of butter, sugar, pecans, and LOVE!  Sink ya' teeth in this pie, and you will understand why so many people look forward to my Southern Pecan Pies, during Thanksgiving.
 
You may schedule pick up, or delivery, of your pies, throughout the Thanksgiving holiday weekend, including Friday, the 5th; Saturday, the 6th; and Sunday, the 7th.  Please note, there will be NO pie service on Monday, October 8th.

The 'Cookin' with the Mississippi Queen', cooking classes begin, as of this week....
  
I'm very proud to FINALLY announce the launch of the 'Cookin' with the Mississippi Queen', cooking classes, which will officially begin, as of this week, with 'Learn to Make Authentic Cajun Jambalaya (mild to spicy)'.  Other classes, such as 'Learn to Make Blackened Catfish' and 'Learn to Make Authentic Creole Gumbo', will roll out very soon, as well.  Be sure to stay tuned.
 
These classes can be taught to larger groups, at a local community centre, in South Etobicoke, or in the privacy of your home, if you have a small group, who would like to gather. 
 
Typical classes are $45 per person, for a two to three hour class, and include a very detailed handout, with pictures, outlining step-by-step instructions, on how to recreate these dishes, on your own, after the class.  Plus, the best part, is that we all eat the food we make!

I have recently made three appearances, on Rogers TV Peel, Daytime, during the month of September, co-hosting the show, as well as doing a few cooking demonstrations.

 Buttermilk Fried Chicken
 
 Fried Chicken is a Southern favorite, and typically always eaten on Sundays, after church, but you will find it available, all over the South, from your high end restaurants, to your local convenience store gas stations!  Yup, Southerners do love their fried food, and especially fried chicken. 
  
Using buttermilk, for the coating, instead of regular milk, adds that extra crunchiness to the skin.

        Zatarain's New Orleans Style Crab Cake Mix is one of my most popular Zatarain's products, and it is the only crab cake mix, which I carry.  Basically, you add mayonnaise, egg, and your crabmeat, and then fry the patties in oil.  It is suggested, you will get approximately eight patties, per box.  I recommend you serve your crab cakes with a side of Creole Remoulade dressing, on the side.  (Please note I only have three boxes of the Crab Cake Mix in stock).  
 
  Zatarain's New Orleans Style Shrimp Creole Base, gives you the seasoning you need, to get the authentic, New Orleans flavor, for your Shrimp Creole dish.  Just add shrimp, rice, and tomato sauce.  There's even a fantastic recipe, on the back of the box for 'Authentic New Orleans Recipe for Baked Redfish in Creole Sauces', which calls for a box of the Shrimp Creole Base, Zatarain's Creole Mustard, and Zatarain's Creole Seasoning.  Substitute redfish for any other fish of your choice.    
  
       Zatarain's Creole Red Gravy Mix is a fairly new product, and one I have recently added to my General Store.  This is a New Orleans favorite, tomato based gravy, spiced with onion, garlic, and Creole Seasonings....preferably from Zatarain's!  In my house, growing up, this was called, 'Tomato Gravy & Rice'.  (Please note I only have three packages of the Red Gravy Mix in stock).
  
   Zatarain's New Orleans Style Red Beans & Rice Original Mix is a very quick, and easy, way to enjoy the infamous New Orleans dish of Red Beans & Rice.  All you have to add is your fat- a small amount of either olive oil, margarine, or butter, to the package, and away you go!  Takes about 25 minutes to cook.  Even I enjoy having these dinner mixes on hand, for nights when I just don't wanna cook! 
Zatarain's Creole Mustard is a staple in my diet, and another very popular product, from Zatarain's, which I carry.  Zatarain's is known for their Creole Mustard, and if you want to make an authentic Remoulade Sauce, which is served in the New Orleans area as a side dipping sauce for most boiled seafood dishes, and cocktails, you will need a nice Creole mustard to add.  Creole Mustard is also great on Po-Boy sandwiches, and a good addition to salad dressings, as well. 
 
  
 
Zatarain's Creole Seasoning....ya' might as well say, 'good on everything'!  Down South, a Creole, or Cajun, all- purpose seasoning, gets used 'bout like salt and pepper shakers, and I always tell my clients, choosing the one, which is right for you, is about your own, personal preference.  Granted, Zatarain's has been around since 1889, so they have a bit more experience in their corner, than most.  They are considered one of the leaders in the Creole seasoning business.  (Please note I only have two of the Zatarain's Creole Seasoning in stock).

Mississippi Queen Foods will be at the Wasaga Beach Blues Festival, August 25th & 26th
 
If you are in the Wasaga area, on August 25th & 26th, you can get your hands on some of my infamous Blackened Catfish; Seafood Gumbo; Cajun Jambalaya; Buttermilk Cornbread; Spicy Coleslaw; and Southern Pecan Pie. 
 
This is a relatively new blues festival, in only its second year, but comes packing a strong punch this year, with the artist lineup.  I am happy to be a part of it, and lookin' forward to bringing some authentic, Southern/Creole/Cajun food to the Wasaga Beach area!

Mississippi Queen Foods will have the 'Catfish & Seafood Shack' set up at Port Credit's
Southside Shuffle, September 7th- 9th
 
Ok, it's quickly approaching this year......the Southside Shuffle, and this year, it's newly revamped, with several stages, and more talent than you can possibly see at once!  It's considered one of Ontario's Top 100 Festivals, for a darned good reason, and if you have not attended previously...now is the time.  Great blues....great food....and great folks, all weekend long. 
 
The Mississippi Queen will be set up with her juke joint/fish shack, in the 'Mississauga Meets Mississippi' area, welcoming my Miss'ippi Friends, to the Mississauga area, once again.  Be sure to stop by the booth, because there are always a few 'surprises' in store.
 
I'll have Blackened Catfish; Jambalaya; Seafood Gumbo; Red Beans & Rice; Buttermilk Cornbread; Spicy Coleslaw; and Pecan Pie...and, as well, the Southern Groceries will be on dispaly, and for sale, should any of you wish to do a lil shoppin' at the festival. 
 
     
  These are a couple of shots I took, of my booth, the 'Catfish & Seafood Shack', at the Kitchener Blues Festival, very quickly
  with my iPhone.  The one in the middle is a resalvaged grocery display unit, which I constructed of materials, salvaged from
  my Pa Pa's old chicken coops, originally built in the 1950's.   The gate is made from an old, rusted, mattress frame and refrigerator
  shelves, and the old, original chicken feeders are on the top of the unit.  The sides have chicken wire, and it is finished off with
  Pa Pa's old Mississippi license plate.  Yes, I felt his energy with me, all weekend......

Not too shabby, considering this is what I whooped up, on Sunday morning, at the Kitchener Blues Festival, on the fly, after running out of ALL of the food, which I brough in, for the ENTIRE WEEKEND, by 8:00 p.m. on Saturday night!!!!!

Another 'Buying Trip' South, will take place sooner....rather than later!!!!
  
 
Yes, I am thinking of another trip South, in either late September, or early October. 
 
I am very happy to say my company is growing, and more and more people are finding my online General Store, especially by way of the YouTube videos, which I have been uploading. 
 
Unfortunately, I am experiencing some 'growing pains', and as many of you have found, I am running out of many products, much faster than normal.  To meet this growing demand, for Southern products, I will make additional trips, each year, most likely in April, September, and January. 
 
For those of you who are new to my process, please feel free to contact me, with any of your special requests, for my next 'Buying Trip' South.  I do keep these requests on file, and I always send out plenty of advance notifications, prior to my trips.

BBQ Season & Tony Chachere's Sale

THE MOMENT WE HAVE ALL BEEN WAITING FOR........BBQ Season!!!!!
            
  
 
Since it is the season to barbeque, I thought I would round up some products, which you can take outside with ya', to enjoy the nice, warm, summer weather. 
   
Andy Roo's makes two great products, specifically for your grilling needs.  One, is the Grilled Fish, and I think the name says it all.  If you can grill it, then this product is for you!  The other, is BBQ Grill, and this one, is an 'all purpose', shake it on everything, type of seasoning, for chicken, pork, steak, seafood, and vegetables. 
 
Even though Dale's Seasoning, is Steak Seasoning it is not just for steaks.  This marinade has been around for over fifty years, and it's a Southern favorite, and a personal fave of my own.  It is highly concentrated, and great on game, chicken, steak, pork, lamb, beef, seafood, and vegetables.  
 
Allegro Hickory Smoke Marinade is another all purpose marinade, great to use, when you want to add the flavor of hickory smoke to your food. 
 
 
Of course, we can't talk about barbeque, without a selection of BBQ sauces, whether you want Memphis, North Carolina, Texas, New Orleans, or the Louisiana Bayou, we are not called the 'United States of Barbeque' for no good reason.  Each area, has its own distinctive flavor, and style of preparing barbecue, as well as sauce.  Click here, if you would like to see more about BBQ sauces.

        Tony Chachere's Creole White Gray Mix and Creole Brown Gravy Mix are both easy to use mixes.  You can make 12 cups of gravy with the White Gravy Mix, and 20 cups, with the Brown Gravy Mix.   There's even a great recipe for making a quick Corn & Crab Bisque on back of the White Gravy, and one for coating Beef Tenders, on back of the Brown Gravy Mix. 
 
 Tony Chachere's Creole Instant Roux Mix is a very quick and easy way to save time when you make your gumbo, and other Creole dishes, gumbos, or even gravies.  This is a 'just add water' mix, and Tony has even provided his 'quick and easy' gumbo recipe on the back of the container. 
  
  
   Tony Chachere's Creole Style Butter Injectable Marinade, and Roasted Garlic and Herb Injectable Marinade, are two of the injectable marinades from Tony Chachere's, which have been really popular Down South, since Tony Chachere first came up with the idea, back in the 70's.  Each bottle includes an injector for you to use, and pictures, and directions on 'how to use' are on the back of the bottle.  These marinades are great to use, whether you are roasting, deep frying, grilling, or smoking. 
  
  
                        Tony Chachere's offers three great, Southern staple, dinner mixes- Creole Gumbo Dinner Mix; Creole Jambalaya Dinner Mix; and Creole Dirty Rice Dinner Mix.  For the Dirty Rice Mix, you just need to add ground beef, and for the Gumbo and Jambalaya Mix, you add chopped chicken, sausage, or ham, or seafood.  Each takes 25 minutes to cook. 
 
 
    Tony Chachere's has you covered for your seasoning needs, whether you want the all-purpose, Original Seasoning; Lite Seasoning (mildest seasoning); the Spice N' Herbs (good for blackening as well); Salt Free; or More Spice (spiciest version).   I have personally used the Original Creole Seasoning for years.

I have been having my fun with these videos, just filming 'on the fly', and going with whatever the heck comes out of my mouth, so I have had my laughs.  
  
My intent is to not only load videos about the online groceries, but to also include some videos I have made, Down South, along my travels. 
 
 
Sweet 'Tater Pie, anyone?
 
People are always asking me what other pies I make besides the Southern Pecan Pie, and I realize with so many people asking the same question, it is probably time I add something new. 
 
I have been thinking about a sweet potatoe pie, keeping with my Southern product line, and maybe introducing it at the onset of fall, just in time for Thanksgiving.
 
If any of you are particularly interested in this idea, please do let me know.  I love getting feedback on these ideas. 
 
 
Overstock Sale Items
 
OK, let's face it...some items just do not sell as well as others, and sometimes I bring back more of certain products than what I needed, during a particular time. 
 
I am organizing my inventory, and putting some products 'on sale', but not due to them reaching the expiration date.  I just need to move some of the product, to create new space.

NEW PRODUCTS FROM THE SPRING BUYING TRIP SOUTH!
     
 
 
As many of you already know, I have returned from my recent Buying Trip Down South, with some new Goodies, in tow!  I not only replenish my regular, line of products, that I typically, always carry, but I also try to bring back a very small, and limited quantity of other products, as a lil bit of lagniappe, or 'something extra on the side'. 

Unfortuntately, some of these products, are purchased in such small quantities, they can become 'sold out' very quickly.  I found this to be the case, with the Stuart's Cajun Dill Pickles, which I picked up this time. They are Cajun Dill Pickles, homemade, by a Cajun, who lives long the Mississippi Gulf Coast.  I posted the information to Facebook, and the only two bottles, which I brought back, were purchased immediately!  If you would like more information on these pickles, please click here.  Rest assured, I will be sure to bring back many more bottles, on my next trip!
 

Here's some information on some of the NEW PRODUCTS I brought back with me.   Bernard's Pure Natural Acadiana Honey is made from sweet, Louisiana honey, packaged in Breaux Bridge, Louisiana, and is a Certified Cajun Product of Louisiana. 
 
 
Lakeside Mills Enriched Yellow Grits, is a family owned and 'family proud' company, located in North Carolina, and the historic mill, has been around since 1736, even feeding the Continental troops, during the Revolutionary War.  'These grits are milled in a way that preserves the unique flavor of real corn.  This process allows you to enjoy the delicious taste of old fashioned country style grits.'
  
 Saints Hall of Famer Rickey Jackson's Mesquite Spicy Honey BBQ Sauce, in 18 oz. bottle.  This BBQ Sauce appears to be one of those 'Louisiana & surrounding areas' exclusive products, because I have not been able to find it online anywhere, at this time.  It is distributed by the Chisesi Brothers Meat Packaging Company, located in New Orleans.   
 
NEW from Zatarain's-  Creole Red Gravy Mix.  New Orleans style gravy seasoned with tomato, onion, garlic, and other spices, and you just need to add water.  Cooks on the stove in minutes, and makes two cups. 
 
Kentucky Kernel Seasoned Flour, which is perfect for coating chicken, chops, beef, seafood, vegetables, and even making gravies.  This company has been around since 1810, and you can use this coating for frying, or baking/oven frying. 
 
Talk O' Texas uses only the finest quality okras for their Hand Packed, Mild, Crisp Okra Pickles.  First, they buy only the finest quality okra, which passes through a 4 step grading process before being placed by hand into the jar. Next, the highest quality spice oils, dry spices, vinegar, salt, and other ingredients are added to ensure the finest product possible. 
 
 Panola Pepper Corporation's All Natural Basmati Rice with Long Grain Aromatic Rice is gluten free, and a product of Louisiana.  This rice is a wonderfully light, full-flavored, even-textured long grain rice with a delicate popcorn aroma. It combines the appeal of the texture of Louisiana long grain rice with the flavor and aroma of Asian Basmati rice, a centuries-old favorite in the Far East.
 
 OK, I have to admit, this product was just too fun to pass up!  I actually found this in a local Family Dollar Store, in South Mississippi, and I love the fact it is 'Soul Food Seasoning', AND has a picture of fried chicken, turnip greens, and corn on the front!  So, if it's considered 'soul food'...it gets this seasoning!  Gotta love that!
 
Corky's Memphis' Own Bar-B-Q Sauce, Original Recipe is world renowned for its award winning BBQ and sauces.  They are a family owned business, and considered to be Memphis' #1 BBQ.  Find out why many celebs consider this one of their favorite places. 
 
Southeastern Mills Old Fashioned Peppered Gravy Mix makes two cups, and you just add water.  Cooks in minutes!  This stuff is great over the top of some homemade buttermilk biscuits...yummy!
 
  Martha White Cotton Country Buttermilk Cornbread, 'just add water' mix, is easy to use in single portion bags.  Martha White has been a trusted name in Southern kitchens, since 1899, providing folks with the highest quality products.
