Crawfish

These freshwater crustaceans resemble small lobsters and they are often referred to as crawdad or mudbug.  Most popularily eaten in Louisiana and surrounding areas of Mississippi.  In fact, 98% of the crawfish harvested in the United States comes from Louisiana.  The most popular way to prepare crawfish is to boil them in a huge pot with cajun seasonings along with potatoes and corn on the cob.
