Chicory Coffee

Chicory and coffee were both brought to North America in the 1700s by the French.  Chicory is a hardy perennial with roots that can be roasted and ground for a variety of uses including as a substitute for coffee. The pairing of coffee and chicory became more popular for the French during their Civil War as coffee was scarce.  There are health benefits from drinking chicory instead of coffee and the most important is that chicory has no caffiene.  Chicory also produces a more roasted flavour than coffee.  It is more soluble in water than coffee, which means you use less of it when brewing.  It is also reported to help cleanse the blood and improve the health of your liver.
