In the South, boiled peanuts are considered a delicacy and you can buy them at roadside stands from May until November.  To make boiled peanuts, you start with green peanuts, which is actually peanuts that have been freshly harvested and not roasted.  You add salt to your pot of water and then boil them for several hours until they reach the desired consistency.
