This long, tapered, tuberous root vegetable is not the same as a yam. Startchy and sweet tasting, sweet potatoes have been cultivated in the South since the 16th century. They are not only made into side dishes; they are also often used to make sweet potato casseroles and even sweet potato pies.
These super sweet onions were first produced in the town of Vidalia, Georgia back in 1931 by Mose Coleman. By the 1940's, farmers' markets were popping up all over the area to promote the local production of these onions. By the 1970s, the Vidalia onion had it's own festival and a mascot.
